The paste is intense straw-yellow in color, soft and homogeneous; slightly grainy with a sweet and delicate flavour.

Ingredients: raw sheep's milk, rennet and salt.

Vacuum package of approximately 400 grams

Price per kg: €25.80

Seasoning: on wooden boards, minimum 120 days + 60 days with different temperatures and humidity; treated with own-produced extra virgin olive oil, turned and greased periodically.

Color: between golden and light brown; the paste is a deep straw yellow colour, with holes that tend to diminish due to time and loss of humidity.

Nose: more decisive but still delicate, with marked and mature hints, a note of cooked milk and toasted hints;

acidity now absent.

Taste: more buttery due to the maturation, with hints of almond and toasted walnut; more attractive structure due to solubility; leaves the palate pleasantly ready for another taste, with a "Mephitic" bitter note typical of Carmasciano.
