The seasoned loin fillet is among the finest cured meats made from pork; it is made with the meat of the back, which is very lean , muscular and poorly innervated.
The processing of the fillet requires delicacy and care on the part of the operators, who are responsible for massaging the meat manually with light and repeated movements and, also, salting and seasoning everything with a mix of spices.
Furthermore, the choice of natural casing over synthetic casing represents another essential step to obtain pure traditional products, without artificial contamination.
