Recommendations for use: ideal for seasoning pasta, flavoring everything with parmesan or pecorino. Recommended as appetizers based on cured meats, ventricina, colonnata lard, mature cheeses, stewed or white cod and smoked fish (tuna, salmon, cod). Also excellent for filling sandwiches and accompanying. Ideal to accompany spelled-based starters and first courses (risottos, soups) and meat dishes.
