Acacia honey is a monofloral honey and is obtained from the pseudoacacia locust tree, whose flowering, which occurs in May, can be compromised by rains and frosts, which unfortunately have become increasingly frequent in recent years and therefore production is decreasing drastically.

It is always very light in color, which also guarantees its purity. Sometimes it varies from straw yellow to amber and has the characteristic of practically never crystallizing, so it always has a liquid and syrupy consistency.

Its scent is flowery and delicate, and its flavor is rather sweet but delicate, so it is well suited to cold preparations because it does not cover the other flavors. It does not contain gluten, so it is ideal for celiacs.

It is easily digestible and can also be consumed by diabetics , due to its low content of complex sugars and high percentage of fructose , which does not have to be metabolised with the help of insulin. And it is, like the various types of honey, also very caloric (100 g provides 300 Kcal).

sugars: contains mainly dextrose (35%) and fructose (40%) as well as a small percentage of sucrose

mineral salts: among these it is rich in potassium, fluorine, calcium, sodium and phosphorus

vitamins: many vitamins including B2, B3, B5 and B6, C and J, as well as folate

amino acids: in particular aspartic acid and glutamic acid, as well as glycine, lysine, isoleucine, proline, cystine, leucine, alanine, arginine, tryptophans and tyrosine.

It can be considered a natural energizer as well as being an excellent highly digestible tonic and a natural alternative to sugar.

It is in fact very energizing and digestible, this makes it a perfect food for athletes and students.

It represents a useful natural remedy even in case of sore throat, as well as having a laxative action and a detoxifying effect for the liver.
