From pigs born, raised and slaughtered in ITALY, coming from the national protected circuit.

The secret to great quality sweet rolled bacon ?

Simplicity, of course!

In fact, it is precisely with the use of a few simple ingredients that you can obtain a really good cured meat, both from the point of view of organoleptic and nutritional characteristics.

To always maintain the same quality standard to obtain its pancetta, De Nunzio Salumi has been sourcing its bacon for more than 30 years from the same breeder, who is part of the national protected circuit.

In this way you have the certainty of taking meat from pigs born, raised and slaughtered in Italy, with strict rules regarding their total respect and their nutrition.

In fact, the natural feed with which the pigs are fed ensures that the meat obtained is rich in nutrients.

How we prepare our sweet rolled bacon

To prepare our sweet rolled bacon, we take a part of the pork belly, removing the rind and making sure that the piece has a good balance of fat and lean meat.

Once laid out on a shelf, we add a mixture of salt and cracked black pepper and massage manually, to ensure that the spices penetrate well into the meat and that the latter, therefore, gets the best flavour.

The salting process, in addition to being necessary to obtain a tasty cured meat, is also necessary for its preservation.

In fact, not using any chemical additives, the only natural preservative we use is sea salt!

We then cover our cured meat with salt and pepper and leave it to act for a few days.

When the bacon is sufficiently malleable, we proceed with manual rolling and insert first into the casing and then into an elastic net.

Once the rolled bacon has been obtained, the time has come to leave it to mature for a period ranging from 2 to 4 months , in well-ventilated rooms with controlled humidity.

Once the maturing time has passed, the salami is ready to be enjoyed, possibly cut with a slicer!

The sweet rolled bacon is perfect to serve in a mixed appetizer of cured meats and cheeses, accompanied by pickles, fresh bread and red wine, such as the red Serrone Taburno DOC !

Furthermore, even if it is mostly used in a stretched format, rolled bacon is often used in the kitchen to complete particular recipes of the wonderful Italian gastronomy!

In fact, bacon is wrapped around chicken, rabbit, turkey, pork and veal to obtain a softer cooking on the inside and crispier on the outside, as well as being very succulent!
