Pancetta tesa is a traditional agri-food product of Campania and, in particular, of Irpinia.
It is a cured meat much appreciated by pork lovers.
The distribution of lean and fat makes this piece particularly versatile, meaning it is perfect both for cooking and for eating as is.
In fact, once sliced and placed on a cutting board, it would be ideal to enjoy it accompanied with other cured meats, soft and semi-hard cheeses and with a generous slice of fresh bread!
De Nunzio 's pancetta has a truly unmistakable flavour.
This is due to the high quality of the meat; obtained exclusively from pigs raised and slaughtered in Italy, coming from the protected national circuit .
The completely natural feed used nourishes the pigs in a balanced way, providing the muscles and meat, more generally, with a good balance of proteins, fats, mineral salts and vitamins.
How we prepare our bacon
The bacon is obtained from the lean belly meat of the pig, cut horizontally, complete with rind and treated in a completely traditional and natural way. In fact, we do not use chemical additives or other substances, because we care about preserving the quality of our products!
Once the piece has been massaged, it is covered with salt and pepper which, during the conservation period, penetrate inside and enrich it with flavors and aromas.
Conservation takes place in special cells with controlled temperature, humidity and ventilation.
Seasoning takes a minimum of 2 months, depending on the size of the cured meat, after which the stretched bacon is ready to be consumed!
Placed on a plate or on a cutting board, together with other cold cuts, in addition to making your appetizers more fragrant and tasty, the stretched bacon will also give a beautiful chromatic effect to the table thanks to the colors of the layers of meat that alternate with each other, the bright red and the lighter one of the lean meat and the ivory of the fatty part.
Tight bacon is also an excellent ingredient for sautéing and to complete particular baked recipes , such as roast pork wrapped in bacon.
The accompaniment of these dishes is perfect with a structured red wine.
