Parmigiano Reggiano DOP aged over 18 months has a light straw yellow colour, a not too grainy structure and good compactness. The taste of yogurt and a note of boiled vegetables are found.

Naturally lactose-free, it can be consumed alone during an aperitif by combining it with fresh vegetables and can become an excellent snack for children even accompanied by fresh fruit.

The rind, once cleaned with a knife and cut into pieces, becomes an excellent flavoring for the tomato puree.
