The Rossa Reggiana is an indigenous breed present in the area of Reggio Emilia and Modena since the year 1000. The red Reggiana cows are robust and long-lived cattle, they are an indigenous breed of northern Italy, larger in size than the average and producing less milk: about a third less than the Friesian breed. Precisely because of this lower productivity it risked extinction, but thanks to a group of breeders and the Reggio Emilia Red Cows Consortium this danger was averted.
The milk produced by red cows is particularly rich in fat and casein, a very important protein for the process of transforming milk into cheese and particularly suitable for long maturation. From this special milk we obtain Parmigiano Reggiano Vacche Rosse. Parmigiano Reggiano Vacche Rosse 24 months is a very fine quality of Parmigiano Reggiano. It has a very high nutritional value which is due to the higher content of fatty acids in milk and consequently also in cheese.
Parmigiano Reggiano Vacche Rosse 24 months has a typical straw yellow color which is given to it by the diet followed by the cow. The red cows feed exclusively on GMO-free grass, hay and cereals.
