Seasoned salami is the typical sausage to open in company, when a guest arrives unexpectedly and you want to surprise him, but also when the family gathers at the table with the intention of having some culinary pampering.
In fact, it doesn't mean that you always have to wait for a special occasion to be able to eat such good food!!
The seasoned salami, with a unique and spicy flavour, is made with trimming meat .
It is a sausage derived from the artisanal processing of meat coming exclusively from pigs from the national protected circuit , which therefore allows you to enjoy a natural and Italian product.
How we prepare our seasoned salami
The processing of the cured salami is decidedly artisanal: the meat is processed by the knowledgeable and expert hands of our cured meat makers, respecting the product and its flavour.
The initial phase begins with the careful selection of the livestock, born, raised and slaughtered in Italy by certified breeders who feed the animals only with natural foods.
Subsequently, the mincing phase takes place, in which the pork meat is minced respecting a balanced balance between the lean and fatty parts.
During the kneading phase, the mixture is then inserted into natural casing and tied by hand, with the addition of salt and natural spices, so as to further flavor the meat.
The maturation of salami requires a period of approximately 50 days, during which the meat acquires an increasingly intense and special flavour.
To best enjoy our seasoned salami, we recommend cutting it with a knife with a smooth, sharp blade, directly at the time of the meal.
To enhance its taste, we also recommend serving it with excellent homemade toasted bread and accompanying it with a glass of red wine.
Aglianico del Taburno DOCG is certainly perfect for this cured meat.
