The diced sausage in oil , first seasoned, is one of our products of which we are particularly proud.
Although the preparation and drying times are relatively long, the final result makes us understand how it is worth waiting a few weeks longer than other cured meats to enjoy the flavour.
How do we prepare our sausage pieces in oil?
To obtain a good dried sausage in chunks in oil, you must first have a top quality fresh product.
Our sausages come from Italian pigs raised by the protected national circuit, which receive care and feeding under strict veterinary supervision.
What our pigs eat contributes to giving added value to the nutrients of the meat, as well as to its organoleptic properties.
Expert butchers process the cuts of meat intended for making sausages following ancient methods, without the use of chemical additives.
De Nunzio's sausage starts from the cut of the shoulder, in which there is a good combination of lean and fat (with a proportion of ⅔ and ⅓ respectively), and from its trituration.
A mix of salt and spices is added to the meat, including wild fennel which gives a very pleasant aroma, and everything is placed in natural casings.
The sausages obtained from this process are left to mature in special well-ventilated cells, in which it is possible to manage the temperature and degree of humidity.
Once the drying period has passed, the sausages are checked and cut into pieces to be placed in sterilized glass jars, together with a quantity of local wild fennel seeds , and covered with sunflower seed oil.
The light and delicate flavor of this type of oil does not alter the taste of the sausages in any way, on the contrary it enhances it without overpowering it.
The diced sausage in oil is ready to be eaten at any time if you feel the desire. It represents a very valid alternative to dried sausage to be cut into slices, as a second course , as a special element of an appetizer , but also as an accompaniment to a meal in which a protein part is already included and you want to give a further pampering to the palate!
