The Aglianico dell'Irpinia DOC Tauri di Caggiano was born in the municipality of Taurasi in the Coste, Piana di Montevergine and Pezza dei Preti districts from 100% Aglianico di Taurasi grapes. The hilly soils of these vineyards are clay-limestone, have a south-west exposure and an altitude of 350 meters above sea level
The harvest of this Aglianico dell'Irpinia takes place between the end of October and the beginning of November, with manual harvesting. The grapes are harvested when they are completely ripe, after destemming and pressing they are subjected to fermentation with intense maceration. This is followed by malolactic fermentation and maturation in French oak barriques Troncai, Center and Vosges for a period of 4-6 months depending on the vintage.
Organoleptic characteristics
The Aglianico dell'Irpinia DOC Tauri di Caggiano has an intense ruby red colour. On the nose the aroma is fruity, with clear hints of red berries and a long aromatic finish of green pepper and black pepper.
Pairings and service
It goes well with red meats, game and mature cheeses, serving it at a temperature of 18°C.
