The local legume soup is called by the dialect term (la pzzente). It is prepared on the occasion of the feast of Saint Joseph. The soup is made up of large beans and purgatory beans, chickpeas, grass peas, peas and strictly local and organic broad beans. Everything is expertly seasoned with extra virgin olive oil. Tradition has it that this dish was cooked in special containers placed at the base of the fireplace. The flavors of that time are still tasted and preserved in our dish. A highly digestible product, appetizing and tasty for the palate, it evokes forgotten flavors but enhances the typical nature of native legumes grown in the high hills according to good cultural practices. The soup contains no preservatives or acids, but only water and a pinch of salt.
Recommendations for use: eat as is or combined with suitable pasta shapes. Excellent puree with croutons.
